  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste
  • Lemon wedges for serving
  • Fresh parsley for garnish

Instructions

1. Prepare the Base:

  1. Heat olive oil in a large paella pan or deep skillet over medium heat.
  2. Add chicken and rabbit pieces, cooking until browned on all sides. Remove and set aside.

2. Sauté Vegetables:

  1. In the same pan, add onion, red and green bell peppers, and garlic. Sauté until vegetables are softened.
  2. Stir in tomatoes and cook for an additional 5 minutes.

3. Cook the Paella:

  1. Add green beans and rice to the pan, stirring to coat with the vegetable mixture.
  2. Pour in the broth and add saffron, smoked paprika, thyme, salt, and black pepper.
  3. Return the browned meat to the pan, spreading it evenly.
  4. Bring to a boil, then reduce heat to low. Simmer without stirring for 20-25 minutes, or until the rice is tender and the liquid is absorbed.

4. Serve:

  1. Let the paella rest for 5 minutes before serving.
  2. Garnish with fresh parsley and lemon wedges.
